Number of Servings: 24

Ingredients

    2 Cups sugar
    1 cup 1% milk
    1/2 tsp. salt
    2 Tbsp. Light Corn Syrup
    1/4 cup Peanut Butter (Smart Balance)
    1/2 tsp. vanilla extract

Directions

In sauce pan combine sugar, milk , salt and syrup. Stir over low heat until sugar dissolves. Cook gently, stirring occasionally, until a little mixture dropped into cold water forms soft ball. (235-240 soft ball) Remove from heat. DO NOT STIR. Cool without stirring until outside of sauce pan feel lukewarm to hand. (about 30-40 mins.) Add vanilla and peanut butter. With spoon, beat until candy loses gloss and small amount dropped from spoon holds it's shape. Turn into greased 9X5X3 inch loaf pan. DO NOT SCRAPE saucepan. Leavings may be sugary. Cool; cut. Makes 1 1/4 pounds. You may cut into 36 pieces and calories will be 60, TF: 1.5 Chol.: .5
