Ingredients

    10 eggs, beaten
    1/2 cup low fat cottage cheese
    1 cup reduced fat cheddar or mexican blend
    1 cup sliced zucchini
    1 cup sliced mushrooms
    2 tbsp chopped green onion
    1 cup chopped ham

Tips

cut and put in individual containers for easy morning breakfasts.


Directions

1. Preheat oven to 375
2. Sautee zuchinni and mushrooms until tender
3. Spray casserole dish with cooking spray and top with ham, vegetables, onions, and cheese
4. Beat together eggs and cottage cheese and pour on top. Mix together.
5. Bake until set, about 35 minutes.
