This is a very cool and refreshing salad. Make it the night before so the flavors can blend. It is served chilled. This is a great potluck or family gathering dish as it makes a HUGE amount. Ingredients

    1 - 16oz box Orzo, cooked as directed
    1 - can kidney beans
    1 - can black beans
    1 - can garbanzo beans (chickpeas)
    1 - can corn
    1 - bell pepper chopped
    1 - bunch green onions chopped
    1 - 16 oz bottle Newman's Own Light Lime Dressing
    1 - Tbsp Cumin (more or less depending on taste)

Tips

The original recipe I saw for this called for a lime dressing to be made with fresh lime juice and olive oil. The Newman's dressing was less calories and less work, so I opted for that. I would like to work on a dressing that would lower the calorie content.


Directions

Cook orzo as directed. Drain, and add to large dish with all other ingredients. Drain the corn before adding it, and drain and rinse all the beans. Chill overnight before serving for best flavor.
