Number of Servings: 1

Ingredients

    * 1/2 slice, Cheddar or Colby Cheese, Low Fat
    * Red Ripe Tomatoes, .25 cup
    * Onions, raw, 1 tbsp chopped
    * 1 Small Corn Tortilla (4-5")
    * Beans, red kidney, 0.5 cup
    * Squeeze of lime
    * dash of hot sauce as desired

Directions

I prefer to use dried beans that I soak and then cook but it works fine with canned beans or non fat 'refried' beans. Basically you warm the beans and just mash them with the liquid they are cooked in. Season with salt, lime and hot sauce as desired. Pile the mashed beans on the tortilla, top with cheese and put in toaster oven until cheese is melted. Top with onions and tomatoes.

    Thankyou, this is brilliant, it satisfies my cravings wonderfully! I left out the onion and added dried garlic flakes to the beans. Fabulous! - 8/21/10

    Incredible!
    I made this with fat-free refried black beans minus the onion and it was excellent. It is very filling. I left out the onion because for some reason they cause cravings for me in the evening. - 10/25/08
