Introduction

Ingredients

    1 Pound (454 gms) Boneless Skinless Chicken Breast - sliced thinly for stir frying
    1 Tbsp Canola Oil
    2 Carrots - sliced in thin strips or shredded
    2 Ribs of Celery - sliced thinly on a diagonal
    1 Medium Onion - Cut in half and then sliced thinly
    2 Cloves Garlic - finely chopped
    1 Tsp Grated Ginger Root
    2 Cups Bean Sprouts (fresh or 1 can) rinsed well
    1 Can Bamboo Shoots cut in Strips
    1 Bag of Broccoli Cole Slaw mix or Rainbow Salad Mix (cauliflower slaw)

Tips

Can be served over/with rice but I haven't included it in the recipe. You can add a multitude of vegetables to this basic recipe to make it your own - try red and green peppers and mushrooms - makes it more of a moo shoo type dish (delicious!).


Directions

In a non-stick frying pan or wok heat 1 tbsp oil until very hot and stir fry chicken strips for a few minutes on high heat until no longer pink. Before chicken starts to brown add in garlic and ginger and stir fry for a minute or so. Add onion, carrot, celery and broccoli slaw and stir fry for another 3 minutes, then add remaining ingredients (bean sprouts and bamboo shoots). Serve hot.
