Ingredients

    1 pound (450g) fresh cauliflower
    1 ¼ cup (300ml) unsweetened coconut milk
    1 cup water (best: alkaline water)
    2 tbsp. fresh lime juice
    2 tbsp cold pressed extra virgin olive oil
    ½ cup fresh coriander leaves, chopped
    Pinch of salt and cayenne pepper
    1 handful of unsweetened coconut chips

Directions

Steam cauliflower for around 10 minutes.

Then, put the cauliflower together with coconut milk and water in a food processor and process until very smooth.

Add fresh lime juice, salt and pepper, most of the chopped coriander and the oil and mix for another few seconds.

Pour in soup bowls and garnish with coriander and coconut chips. Enjoy! ;-)
