Ingredients

    1 Tbl. Olive oil
    1 cup onion, chopped
    1 cup celery, chopped
    4 garlic cloves, minced
    1 lb. ground turkey or chicken
    3-4 (14.5 oz) cans fat free chicken broth
    2 (4 oz.) cans green chilis, diced
    2 tsp. ground cumin
    3 tsp. dried oregano
    1 tsp. cayenne pepper
    Optional: shredded Monterer Jack cheese, sour cream, cilantro

Directions

Heat oil in large pot over medium heat. Saute onions, celery and garlic until onions are tender.
Add chicken cook until no longer pink.
Add spices cook for 1 minute.
Add broth and green chili peppers. Bring to a boil.
Reduce heat to low and add beans. Simmer 20-30 minutes.
Serves 6 (approximately 1 1/2 cup servings).
This is pretty spicy, reduce cayenne if you don't like it too spicy. Also, you could reduce the sodium in this recipe by using homemade stock or reduced sodium broth.
