Introduction

Ingredients

    Scallops, raw, 1 unit 2 large or 5 small
    *White Rice, medium grain, .5 cup
    Green Peppers (bell peppers), .5 cup, strips
    red bell pepper, 1 serving
    Onions, raw, 1 medium (2-1/2" dia)
    Tomato Sauce, .50 cup
    *adobo goya, 0.25 tsp
    *Sazón Goya (Sazón with Azafrán), 1 packet
    Pepper, black, 1 tsp
    Garlic, 1 clove
    Cayenne pepper 1 dash

Tips

If you do not like spicy foods don't add the cayenne pepper. You could even make a little sweet by adding Paprika. Also as you eat it just taste it and focus on the flavors and textures :-) enjoy


Directions

Rinse rice to get the starch off. Put rice in a pot add just enough water to cover rice let it come to a boil and then lower temp to a simmers. Stir every ten minutes if rice is a little hard just add small amounts of water let cook and keep adding until rice is tender.

While rice is cooking season scallops with adobo, cayenne pepper, and black pepper. Then saute onions, peppers (any you like),and garlic in a pan with olive oil. Take out once it becomes tender

Then take scallops add to the pan and saute them (do not add more oil) once scallops are cooked add the peppers and onions back and the tomato sauce and add sazon packet.

Let simmer for 5 minutes. Take rice and put in a 1cup measuring cup. Pack it and turn over in a bowl for a nice presentation of the rice. Then poor sauce around the rice and for garnish add a little cilantro (optional).... and ENJOY :-D

Serving Size: one person serving...rice equals one cup cooked and the veggies get eaten by one person
