Ingredients

    8 slices whole-grain bread
    4 Apples, pared and cut into 1/2" chop
    2 Cups Blueberries
    6 Egg Whites, beaten (or 1 1/2 c. Egg white replacement)
    1 1/2 Cup Soy milk
    Juice of 1 Lemon
    1 Tblsp. Ground Ginger
    1 Tblsp. Ground Cinnamon
    1 tsp. Ground Nutmeg
    Olive oil Spray

Tips

A crisp, sweet apple like Fuji or Gala works best. A dollop of yogurt finishes it off nicely and adds a bit more protein if you need it.


Directions

Heat oven to 350. Spray a 13 x 9 inch pan with the oil. Break the bread into small pieces and place them in the pan. Clean and rinse the blueberries then spread them over the bread pieces. Pare and chop the apples, then place them over the blueberries. Combine the egg whites, soy milk, lemon juice and seasonings in a medium bowl and mix well. Pour evenly over the fruit and bread. Bake for 55 mins. Allow to cool and set up for 1/2 hour before slicing into desired portions.

Serving Size: Cut into 8 servings for a complete breakfast
