Ingredients

Flank Steak, 12 oz
3 Roma Tomatoes
1 Large Onions, cut into slices
Olive Oil, 2 tbsp (1 for onions, 1 for tomatoes)
Loaf of French Bread
3 oz. Blue Cheese, crumbled
5 TBSP Fat Free Mayo
Directions
1. Preheat the oven to 350 degrees. Preheat the grill.
2. Season the steak with grill seasoning or salt and pepper. Set aside.
3. Mix the blue cheese and mayo in a small bowl and place in refridgerator.
4. Cut the onions and tomatoes into slices. Place the tomatoes on a baking sheet and toss with 1 TBSP olive oil and sprinkle with salt. Bake for 15-20 minutes or until tender and wrinkled.
5. Put the steak on the pre-heated grill and cook until desired doneness.
6. While steak and tomatoes are cooking, put 1 TBSP olive oil in skillet. Heat a minute or two, then add the onions and saute until soft and starting to carmelize.
7. When steak is done, let rest on plate for 5 minutes. Then, cut across the grain in thin slices.
8. Cut open the french bread length-wise and assemble the sandwiches: Steak, onions, tomatoes. Spread the mayo mixture on the top half of the bread and close the sandwich. Cut into 4 equal servings. Enjoy
