Ingredients

    2 chicken skinless boneless chicken breasts, cubed
    1 cup brown rice, medium grain
    3 cups chicken stock
    8 oz low-fat cream cheese
    1/4 cup unsalted butter
    2 cups 2% milk
    1 cup Mexican Four cheese blend
    Salt and pepper to taste

Tips

I am serving with steamed broccoli!


Directions

Cook chicken and set aside. Bring chicken stock to a boil, add rice, cover and simmer until done. In a medium sauce pan, melt butter and cream cheese, then stir in cheese. Season with salt and pepper to taste.
