Ingredients

    8 oz (1/2 Lb) - Whole wheat spaghetti, uncooked
    10 Cups - Kale leaves, washed and torn in to salad size pieces.
    4 tsp - Olive oil
    1 Cup - Onions, diced
    4 Cloves - Garlic, chopped finely
    1 Lb - Shrimp, peeled, deveined
    2 Cups - Grape tomatoes, halved
    1/2 tsp - Kosher salt (optional)
    1/2 Cup - Fresh basil, thinly sliced
    1/2 Cup - Shredded parmesan cheese
    Fresh ground black pepper, to taste

Directions

Serving Size: 5 small servings
1. Add pasta to lightly salted, boiling water. Boil about 6 minutes or as directed on package.
2. At the same time, place the kale in to a large pot with a lid. Add about a 1/3 of a cup of water, cover and steam on med/high heat for about 5 minutes. Keep covered and set aside.
3. Drain pasta, return to the pot to keep warm. Set aside.
4. In a large pan, heat the oil on medium heat.
5. Once oil is hot, add onions, toss for about 2 min.
6. Add the shrimp and garlic, toss about 2 minutes.
7. Add the tomatoes steamed kale and salt. Use tongs to toss until shrimp is completely cooked.
8. Add everything to the pasta, using tongs to evenly incorporate all of the ingredients.
9. Transfer to serving dishes. Top with basil and parmesan. Season with pepper.
