Introduction
This is a yummy recipe for a low cal and low fat muffin! The recipe can make anywhere between 6-8 muffins depending on how hearty you like your muffins. These muffins don't raise very much while baking so add more batter than you'd usually add to your muffin cups for a heartier muffin :) This is a yummy recipe for a low cal and low fat muffin! Ingredients

* ¾ c. oat flour
* ½ c. old fashioned oats
* ¼ c. maple syrup
* 2 tbsp. ground flax seeds
* 1 tsp. cinnamon
* ½ tsp. baking soda
* 1 tsp. baking powder
* ¼ tsp. salt
* 1 egg white
* 1/3 cup apple sauce
* ¼ tsp. vanilla extract
* 1 small banana, mashed
* ½ c. almond milk
Tips
Original recipe calls for 1/4 cup firmly packed brown sugar, I swapped for maple syrup. Original recipe calls for 2 and a 1/2 tablespoons of canola oil, I swapped for 1/3 cup apple sauce. Original recipe calls for regular milk, I swapped for almond milk.
Directions
* Preheat oven to 350 degrees and line muffin pan with six paper muffin cups
* Combine whole wheat flour, oats, brown sugar, flax seeds, cinnamon, baking soda, baking powder and salt
* In a separate bowl, mix together egg white, oil, vanilla, banana and milk
* Gradually mix flour mixture into egg mixture until batter is combined
* Divide the batter into the six muffin cups
* Bake for 15 – 18 minutes
