    3 cups uncooked penne
    1-2 tbsp olive oil
    1 pound italian sausage, casing removed
    5 cloves garlic, thinly sliced
    pinch dried red pepper flakes
    4 plum tomatoes, choppe
    1 Cup red wine
    1/2 cup grated parmesan cheese
    2 cups raw arugala, chopped


No need to add seasoning to sausage mixture, sausage is already seasoned.
If pasta mixture is too dry, add ladel of pasta water.


-cook penne
Meanwhile prepare sausage mixture.
Brown sausage in olive oil. Break sausage into small pieces as it cooks.
Add garlic and pepper flakes. Cook till garlic is soft.
Add plum tomatoes and cook until much of the liquid is dried.
Add wine and cook to reduce liquid (about 3 minutes)
Drain pasta and add to sausage mixture. Stir. Remove pot from heat.
Add parmesan cheese. Mix in.
Add arugala. Mix in.
Ready to serve.

Serving Size: makes 6 1cup servings or 3 2cup servings
