Introduction

The other night I was looking for something that would be a quick and easy to make and found this in my family favorites section of the crock pot cook book. I had all the ingredients in my house so thought why not. Trust me I had to make some changes because the original recipe was over 900 calories. Enjoy! Ingredients

    Original recipe
    2 lbs ground beef
    1 onion chopped
    1 tbsp oil
    1 tsp cumin
    1 tsp garlic
    1 tsp chili powder
    1 can tomato sauce
    8 - 10" flour tortillas
    4 cups cheddar cheese shredded

    Make over Recipe
12.5 oz Ground Beef 90% lean
12.5 oz Ground Turkey 93% lean
1 cup black beans (I make up 2 lbs in advance every month and keep them in my freezer, I don't use canned beans)
1 can diced tomatoes DO NOT DRAIN ( I will use chili ready tomatoes but didn't have any when I made it this time)
    1 tsp onion powder
    1 tsp garlic powder
1 tsp cumin ( You can use more if you want more of a kick)
1 tsp chili ( I tend to use less if I am using the chili ready tomatoes)
10 - 10" low carb whole wheat tortillas
12 oz shredded cheese ( I tend to make sure it is finely shredded because it goes farther that way)

Directions

Brown hamburger and turkey.

Drain meat ( I rinse all my meat but that is optional).

Add beans, tomatoes, and seasonings. Heat through.

Take 4 - 20" x 2" strips of foil. Can use heavy duty. If using regular foil double up the thickness.

Arrange each strip in the crock pot to form a wheel like handle.

Place 1 tortilla in the bottom of the crockpot on top of the foil. Layer with meat mixture followed by cheese.

Repeat 10 layers ending with cheese.

Place on high for 1 - 1.5 hrs. Can be done on low for 3-4 hrs.

When done grab the foil to lift out. ( Makes clean up a breeze)

Cut into 12 wedges and serve.

Enjoy!
