Ingredients

    1/2 tsp olive oil
    1 large onion chopped
    2 garlic cloves minced
    2 large portobella caps sliced thin
    1/2 cup red wine
    1 large tomato diced
    1 15 oz can chickpeas (no salt added) juice reserved

Directions

heat oil in pan and spread to cover skillet. add onions and garlic and saute for 2 minutes. add the mushrooms and wine, cook for 5 more minutes. add the tomatoes and beans plus half of the liquid from the can. season as desired. cook for another 10 minutes.
