Ingredients

    1, 3lb Pork Tenderloin Roast
    Garlic Powder
    Onion Powder
    Salt & Pepper
    6 Potatoes, chopped
    2-3 large Carrots, sliced
    4 Onions, halved
    1 can Cream of Mushroom Soup, healthy request
    1 envelope Onion Soup Mix
    1 can Merlot Wine
    1 tbsp Italian Seasoning
    1 tbsp Oregano
    2 tbsp Garlic, minced
    1 tbsp Dijon Mustard

Tips

The sauce will be a thin gravy. You can either add a cornstarch slurry or a couple of ounces of greek yogurt to thicken.


Directions

1. Sprinkle pork tenderloin with garlic powder, onion powder, salt and pepper on all sides.

2. In a large pot sear pork, on all sides, in a little olive oil.

3. Place pork, potatoes, onions and carrots into a 6 quart crock pot.

4. Mix remaining ingredients in a medium sized bowl and pour over all items in the crockpot.

5. Cook on low for 6 hours. Remove lid and continue to cook another 30 minutes to thicken sauce.

    Great depth of flavor! I browned it in a Dutch oven and cooked it in the Dutch oven at 250 degrees for about 4 hours. - 10/24/15
