Introduction

Number of Servings: 12

Ingredients

    12 reduced fat nilla wafers
    1 block fat free cream cheese (8oz) softened
    1 block 1/3 less fat cream cheese (8oz.) soft
    1/2 cup splenda
    1 egg
    1 tsp vanilla extract (or any other flavor you like)

Directions

cream the softened cream cheese with the splenda by mixer. Add in the egg and extract and continue to mix. Place one nilla wafer in the bottom of each of 12 muffin cups in a muffin pan. (Spray each cup with non-stick cooking spray prior to inserting the nilla wafer) Place a heaping spoonful of the mix on top of each nilla wafer, leaving approximately 1/3 of the cup unfilled. Bake these in a preheated oven at 350 degrees for approximately 20 minutes. Leave them in the metal pan for cooling (to retain shape). Enjoy!

    This is my next conquest in the kitchen! I'm very excited to make these! I was thinking about drizzling a very small amount of chocolate syrup and then topping with cherry pie filler! I'll let you know how they turn out! - 8/10/08

    Incredible!
    I used a spoonful of Fat Free Cool Whip and another spoonful of No Sugar Added cherry pie filling to top these and they were great! My kind of dessert, EASY! - 6/30/08
