Number of Servings: 16

Ingredients

    4 cups chopped Romaine
    6 cups fresh Spinach
    2 cans Mandarin Oranges, drained
    1 large Red Onion, cut into rings
    1 Yellow Bell Pepper, chopped
    4 cans pink Salmon, drained
    3 large eggs
    1 cup of crushed crackers or oats
    2 Tbsp Old Bay seasoning
    A large dash or two of Tabasco
    Salt and Pepper to taste

Tips

Orange vinaigrette or Vidalia onion vinaigrette are excellent choices for this salad.


Directions

Combine greens, chopped oranges, onions and pepper in salad bowl. Set aside.
Combine salmon, eggs, crackers or oats, Old Bay, Tabasco, Salt and Pepper. Mash well, and form patties (about 2 inches across).
Pour oil into a skillet and heat. Add patties 6-8 at a time. Cook 5-8 minutes on each side.
Divide salad onto plates, then place salmon patties on top and dress as desired.
