Ingredients

1 La Tortilla Factory low-carb large tortilla
1 wedge light spreadable pepperjack cheese
2 slices Lightlife vegan turk'y, chopped/sliced
1/4 cup chopped baby spinach
1/4 cup chopped fresh tomato
onion powder, garlic powder, salt (or nusalt)/black pepper, + crushed red pepper flakes
Directions
Begin by chopping/slicing your turk'y and fresh vegetables.
Microwave tortilla for about 30 seconds, and then spread cheese wedge over entire tortilla surface. Cover with chopped turk'y.
In a small skillet over medium heat saute spinach and tomato until spinach is wilted. Add a dash each (or to taste) of salt, black pepper, onion/garlic powders and a tiny pinch of crushed red pepper.
When spinach is wilted, top tortilla with cheese and turk'y with the veggie mixture.
Fold tortilla in half to form a quesadilla and cook in preheated skillet (sprayed with nonstick spray) for 1-2 minutes per side, or until crispy and brown. Slice into wedges and serve!
