    - 4 medium sweet potatoes, peeled and cubed
    - 2 medium sweet onions, cubed
    - 2 tablespoons extra-virgin olive oil
    - 3/4 teaspoon garlic-pepper
    - salt


- Combine all ingredients in a 13 x 9-inch baking dish
- Toss to coat
- Bake at 425 degrees until potatoes are tender (approx. 45mins - 1hr), stirring occasionally.
