Ingredients

30ml/2Tbsp olive oil
50g/2oz lean bacon, diced (or bacon bits)
1 eating apple, cored and chopped
2 small heads cos or romaine lettuce
a squeeze of lemon juice
salt and ground pepper
For the Dressing:
150ml/1.25 pint/2/3 cup sour cream
15ml/1Tbsp cider
50g/2oz Camembert or similar cheese, chopped
a dash of cider vinegar
Directions
Heat 1 Tbsp of the olive oil in a large frying pan and add the diced bacon. Cook over a medium heat until crisp and golden. Add the chopped apple and cook gently for 1-2 minutes until golden brown and softened.
Tear the cos or romain lettuce carefully into bitesize pieces.
To make the dressing, heat the sour cream, cider, cheese and vinegar together in a small pan over a low heat until smooth and creamy.
Toss the lettuce with the remaining oil and the lemon juice, season, then divide among four plates. Heap the warm apple and bacon on top, then drizzle over the dressing.
