Introduction

This is a doubled recipe of one I saw on Veria channel's show "Fed Up!". It's the topping for a corn cake but I made this for pound cake at a family event. Picture to come! Ingredients

    2 cups quartered strawberries
    ˝ cup 100% apple juice (unsweetened)
    2 tsp vanilla extract
    2 Tbsp butter (Country Crock Calcium used here)

Directions

Instruction from the show:
Remove crowns from strawberries and discard.
Dice strawberries.
In a small pot or pan, sauté strawberries in butter, 1 minute or until wilted.
Add apple juice and vanilla and cook on medium heat until liquid reduces (about 5-7 minutes).

    Very Good
    This is really tasty. I used cranberry juice rather than apple, to make it super-red. I was able to use up some strawberries before they got too soft, and the leftovers do well in the fridge. I put it on a one-mug coffee cake! - 8/20/12
