Ingredients

    Chicken Breast, no skin, 12 ounces
    Stewed Tomatoes, 1.75 cup
    Carrots, raw, 2 medium
    Onions, raw, .5 large
    Garlic, 3 cloves
    Red Potato, 600 grams
    Olive Oil, .25 tsp
    *Hunt's Tomato Sauce, no salt added, .875 cup
    Basil & Rosemary (or other spices if desired) 1/2 tsp total
    Black pepper
    Red pepper flakes

Directions

Chop veggies as desired. Combine all ingredients (except chicken and oil) in a 2 qt. baking dish coated with cooking spray. Add chicken on top. Spread olive oil on top and sprinkle some red pepper flakes. Bake in 425 degree oven for 45 minutes or until chicken is cooked through and potatoes are tender.
