Introduction

Don't get this savory acidic veggie Salvadoran side dish confused with Mexican pico de gallo. It can be accompanied with pupusas, empanadas, fried yuca, or with a meal of grilled meat (any kind) with rice. It basically goes with any lunch or dinner entree your taste buds desire. Ingredients

    1 large diced cucumber

    4 medium sized tomatoes diced [any kind]

    1 medium to large onion diced [white or red]

    1 cup diced fresh cilantro

    3 fresh limes (NO SUBSTITUTE) OR (half a cup of white vinegar) or less [taste for preference]

    1-1.5 tablespoons olive oil or less [taste for preference]

    1 teaspoon of salt or less [taste for preference]

    *Optional*: 1 finely diced jalapeņo pepper (with or without seeds)

Tips

This recipe is not necessarily identical to the Chirimol you will eat if you go to El Salvador. The olive oil, cucumber, and jalapeņo pepper are my own personal additions.


Directions

- Just mix all of the ingredients in a large bowl with a lid (no predetermined order) and then close the lid and shake the bowl so that the ingredients inside toss.

- After preparation is done simply leave the Chirimol in the fridge for 20 minutes or longer so the acidic juices concentrate into the mixture better, thus resulting in an even more delicious finished product.

Serving Size: makes 8-10 half cup servings
