Ingredients

    2 cups unprocessed wheat bran
    3/4 cup boiling water
    2 large egg whites
    1/2 cup apple sauce
    3 medium ripe bananas, mashed
    1 cup skim milk
    1 1/2 cups whole wheat flour
    1/2 cup soy flour
    3 TBS baking powder

Directions

Pour boiling water over 1/2 of the wheat bran and stir. Add egg whites, apple sauce, bananas, and skim milk, stiring after each addition. Sift flours and baking powder together and add to mix, blending thoroughly. Add remaining wheat bran and stir just to moisten.
Spoon into muffin tin sprayed with cooking spay or lined with muffin cups. Bake in preheated 400 degree oven for about 15 minutes or until toothpick comes out clean.
These freeze well and can be thawed or reheated in a microwave.
Makes 18 muffins.

    Good
    Nice! I added a cup of walnuts and 1/4 cup of Splenda. I didn't have soy flour so I did without and they still turned out well. Nice way to get some fiber in.
