Number of Servings: 5

Ingredients

    5 Medium Bell peppers ( color of choice)
    1 lb 98% fat free ground turkey
    1 cup uncooked brown rice
    3 cup Spagetti sauce
    1 small red onion chopped
    1 clove garlic
    salt (to taste)
    pepper (to taste)
    Italian seasoning (optional)
    1/4 c. mozarella cheese (part skim)

Directions

Remove top & seeds from peppers
Place peppers in boiling water until they turn dull in color
Brown meat with garlic, onion and seasonings
Cook rice per directions
Mix rice, meat & 2 cups of spagetti sauce together
Fill peppers with mixture
pour remaining 1 cup of spagetti sauce on top
cover with foil and bake at 325 for 20 min. Remove foil sprinkle with cheese & bake an additional 10 min

    I have never heard of boiling a pepper before filling it. Mine get tender enough in the oven. Boiling would leach out vitamins and minerals. - 5/2/20

    Incredible!
    Great recipe. I used red, orange and yellow bell peppers. I also used 1/2 tsp of garlic salt; 1/4 tsp pepper; no ital seasoning; white onions instead of red. I plan on making it again ;) - 6/21/10
