Ingredients

2 Tbs. olive oil
1 onion, coarsely chopped
2 stalks celery, sliced cross-wise
2 tsp. garam masal (Indian spice blend)
1.5 cups uncooked lentils
6 cups vegetable broth
Salt & freshly ground black pepper, to taste
Tips
After 40 minutes I add 2 (14.5 oz.) cans of diced potatoes and cooked 5-minutes more. You could also add cooked pasta at the end. Both of these additives make the soup heartier.
Directions
In a large saucepan, heat oil over medium heat and sauté onion and celery until tender, about 10 minutes.
Add garam masala and stir to coat onions.
Add lentils and broth; bring to a boil. Lower heat to simmer; cook, covered until lentils are tender, about 45 minutes.
Season with salt and pepper, and adjust the spices to taste.
Serving Size: Makes 6-8 (1 cup) servings
