Introduction

This is one of the simpliest recipes I have, that to a degree is a healthy. This is one of the simpliest recipes I have, that to a degree is a healthy.
Number of Servings: 6

Ingredients

    4 Large Potatoes
    .5 cups of green peppers
    .5 cups of red peppers
    .5 cups of yellow peppers
    .5 cups onions
    Extra virign olive oil
    Salt

Directions

Peal and dice the potatoes. Then rince them at least 3 times, this gets rid of a lot of the starch. Dry the diced potatoes or they will splash hot oil when you dump them in. Put your extra virgin olive oil, in a skillet and heat it a little(you may have to add more as you are cooking), then dump in all of your ingredients, and fry them slowly. They do not take really that long to fry, they are done pretty quickly, but it is accoring to whether you like them a little mushy or browned. Add salt to your preference.
