Ingredients

    1 lb Ground Chicken
    Spaghetti Sauce, Classico Tomato & Basil, 1 jar
    diced tomatoes, 1 can (14 oz.)
    Tomato Paste, 1 can (6 oz)
    Mushrooms, fresh, 8 oz package, sliced
    Canola Oil, 2-4 tbsp
    White Wine, 1-2 fl oz
    Onions, raw, 1 large, diced
    Garlic, about 6 cloves, crushed/minced
    Barilla Plus Penne, 14 oz (one box)
    Mozzarella Cheese, part skim milk, 8 oz
    Rosemary, dried, 1 tbsp
    Basil, 1 tsp
    Salt, .5 tsp
    Pepper, black, .25 tsp

Tips

This recipe lends itself well to variations: ground turkey, ground chicken, diced chicken breast, shrimp, or no meat and just about any veggies. Works with ziti, rotini, or similar pasta shapes. Fat-free cheese doesn't melt well on top though.


Directions

Spray a 9"x13" pan and preheat oven to 350.
Sauce: Cook diced onion and rosemary in 2 Tbs canola oil until soft. If needed, add a little more oil. Add mushrooms, garlic, and wine and cook for about 5-10 min. Add chicken (plus a bit more oil, if needed) and cook through, breaking into small pieces. Add tomato products, basil, salt, and pepper. Cover and simmer for about 10 minutes.
Pasta: Boil pasta for a minute or two less than directed on box.
Mix pasta and sauce together. (I use the pasta pot.) Pour into prepared pan. Top with mozzarella cheese. Cover with foil and bake for 15 minutes. Uncover and bake for 10 minutes.

Serving Size: Makes eight 3" squares
