Introduction

Ingredients

    18 large uncooked shrimp, peeled
    4 oz button portabella mushrooms
    1/2 red or yellow bell pepper, seeded and cut into 2-inch pieces
    1 medium onion, peeled and cut into 2-inch pieces
    4 hearts of palm, cut into 2-inch pieces
    1/4 bottle (enough to coat) Lawry's (or other) Caribbean Jerk marinade

Directions

Marinate all ingredients for several hours or overnight in the refrigerator.

Prepare a very hot grill. Metal skewers are recommended; if using bamboo skewers, soak them in hot water for at least 30 minutes to prevent charring of the wood.

Skewer the vegetables separately from the shrimp, using 6 skewers for veggies and 2 for shrimp. Place vegetable kebabs on a very hot grill for about 3-5 minutes, turning once, until the veggies are just beginning to char. Just before veggies are finished cooking, place the shrimp skewers on the grill and cook for about 2 minutes, or until the shrimp is just cooked through (color changes from gray to pink). Serve immediately.

Makes 2 servings; each person gets one shrimp and three veggie skewers.
