Ingredients

    2 Eggs and 1 Egg White
    .5 cup of Bell Pepper
    .25 cup of Sliced Red Onion
    .5 cup of Fresh Spinach

Directions

Saute onion and pepper over medium heat with olive oil spray for 3 minutes. Add fresh spinach and saute for another 2 minutes. Pour in beaten eggs and cook until done scrambling everyso often. Enjoy with salt and pepper.
