Ingredients

    4 Cups - Watermelon, cubed
    2 Cups - Cucumber, diced
    1/4 Cup - Fresh Lime Juice
    3/4 Cup - Red onions, very thinly sliced
    1/4 Cup - Fresh mint, chopped
    1 Cup - Feta cheese, cubed or crumbled

Directions


Serving Size: 8- 1 cup Servings
1. Place sliced onions in a bowl and cover with lime juice. Let it stand for 10 minutes to mellow the raw onion flavor.

2. Gently toss all ingredients together in a large bowl. Serve immediately or within an hour.
