Introduction

Ingredients

    1 egg
    1 egg white
    1 (7.5-inch) whole-wheat tortilla
    1/4 cup sliced mushrooms
    1/4 teaspoon black pepper
    2 cups spinach
    2 tablespoons crumbled feta


Tips

To freeze: Allow wraps to cool, then wrap tightly in plastic wrap or place in a ziptop bag. To reheat: Microwave on high for 4 minutes.


Directions

Whisk the eggs in a small bowl.
Place the tortilla on a microwave-safe plate and heat on high for one minute.
Coat a small skillet with nonstick spray, then place over medium heat. Add the mushrooms and pepper and cook for 2 minutes. Stir in the spinach, and cook for 1-2 minutes, until wilted.
Add the eggs and cook, stirring often, until they are set, about 2 minutes.
Place the egg scramble in the center of the tortilla, then top with the feta. To wrap, fold up one end, then both sides.
Serve immediately, or wrap in foil to take it on the go.

Serving Size: Makes one burrito.

    Incredible!
    This was amazing and filling! A delish breakfast and a keeper I will make many times. I ran out of feta, so I used pinch of low fat cheddar. I would love this even skipping the cheese. Possibilities are endless! - 5/15/13
