Introduction

Ingredients


    2 T. Olive Oil
    1 Cup Chopped yellow or white onion
    1 Cup Chopped Celery
    1 Cup diced carrots
    3 cloves garlic minced or put through a press
    4 T. Fresh Thyme leaves removed from stems
    2 C. Redskin potatoes, diced and peeled
    1 Smoked turkey drumstick
    1 lg Carton low sodium Fat Free Organic Chicken broth
    1 5 oz. can low sodium V8
    1 lb. of dried Navy Beans (soaked overnight in cold water and drained)


Directions

Heat oil in large non stick pan and saute onions and celery for 3-4 minutes. Add pressed or minced garlic and saute another 1 minute on medium high heat. Transfer to slow cooker or crock pot (5 or 6 qt size), and add all the remaining ingredients except the V8. Be sure to soak the beans over night and drain the liquid off before adding. Cook on low 8-10 hrs or high 5-6 hrs. At the end, stir in the V8 and salt and pepper to taste.
Enjoy with a nice leafy green salad and some whole wheat crackers. YUM!
