Ingredients


    Ingredients:
    Carrots, raw, 1 pound
    Onions, raw, 2 medium, cut into wedges
    Fennel, 1 bulb, cored & cut into wedges
    Olive Oil, 1 tbsp
    Butter, unsalted, 1 tbsp
    Salt, 1 tsp
    Pepper, black, 1 tsp

Tips

This is a great side dish with chicken or pork, and also a great vegetarian meal served over some brown rice.


Directions

Preheat oven or grill to 400-425. Wash & cut carrots (do not peel) into 3 inch chunks. Place all the vegetables into a 9x13 baking dish. Melt butter into olive oil in small pan until just dissolved and incorporated, then pour over vegetables and stir to coat. Sprinkle salt & pepper over and stir to distribute. Roast in oven or on grill, stirring once or twice, 45-60 minutes depending on your preference. (I like them really browned and caramelized, so I roast for at least 60 minutes!)
