Ingredients

    *Goya Black Beans, 1 can
    *brown rice (1 cup cooked),
    *Old Fashioned Quaker Oatmeal- Plain (1/2 cup dry
    Egg, fresh, 1
    Onions, raw, 1 cup, chopped
    Mushrooms, fresh, 1 cup, pieces or slices
    *Carrott Baby Cut, 4 oz
    Jalapeno Peppers, .5 cup, sliced
    Green Peppers (bell peppers), 0.5 cup, chopped
    *Old El Paso Taco Seasoning, 2 tsp
    *365 Brand Panko Bread Crumbs, 1 cup
    Olive Oil, 2 tbsp

Tips

I use a pannini press. It makes a nice burger with a crunchy outside. I eat on a whole wheat english muffin. I make the batch on sunday, wrap them up individually and have them throughout the week.


Directions

1.Sautee onion in EVOO, add chopped mushrooms, carrotts, pepper.
2.Add taco seasoning.
3.In Cuisenart, add rice, oats, 3/4 can of black beans, pulse
4. Add onion mixture pulse 2-3 times
5. Place in bowl and add remaining black beans plus 1 slightly whished egg.
6. Make a patty, cover both sides in panko
7.Refrigerate for at least 30 minutes or freeze for use later.
8. Heat griddle, skillet or sandwhich press, heat through for about 7 minutes.
