Number of Servings: 6

Ingredients

    4 chicken thighs
    8 -10 cups of water
    1 cup long grain white rice
    6 dried chinese mushrooms, rehydrated and sliced thinly
    2 tbsp salt

Tips

Instead of chicken you can use pork and shred it, like pulled pork, after it is done. Seafood can be added in the last hour of cooking. Amount of water used depends on if you like congee thick or runny.


Directions

Place all ingredients in a slow cooker, cook on high for 4or 5 hours, or on low for 8-10 hours. Take chicken pieces out and shred them with a fork. season further to taste, you can add more salt, pepper, soy sauce, cilantro (chopped), green onions (finely chopped), salted peanuts, chinese donuts, etc.... as you like.
