Ingredients

1 cup Hoisin Sauce (Lee Kum Kee brand preferred)
1 tbsp Granulated Sugar
1.5 tbsp Kikkoman Tamari Soy Sauce
1.5 tbsp Sherry Wine Vinegar
1.5 tbsp Marukan Rice Vinegar
1 tbsp Scallions, finely chopped
1 tsp Tabasco Sauce
0.5 tbsp Black Bean Sauce (Lee Kum Kee preferred)
1.5 tbsp Fresh Ginger, peeled and grated
1.5 tbsp Garlic, finely chopped
.75 tsp ground white pepper
1/4 cup Cilantro, finely chopped
1 tbsp Sesame Oil
Tips
Meats should marinate at least 3 hours, preferably overnight, for the full flavors to penetrate. You don't need to "drown" the meat either. Coat the meat and reserve the remaining sauce for dipping or another meal.
Directions
Combine all ingredients in a non-reactive mixing bowl and stir well to combine. Allow to sit a room temperature for 30 minutes for flavors to meld.
Store sauce up to 2 weeks in fridge
