Ingredients

10 – 12 large cabbage leaves and the rest shredded
1 lb. ground turkey breast
½ cup cooked brown rice
1/4 C egg beaters
Salt, pepper
½ cup raisins (or more if you like)
1 onion diced
Juice of 1 lemon
1/4 C Brown Sugar
2 cups canned stewed tomatoes
1 cup water
Directions
Use large, whole outside leaves of cabbage. Place in boiling water for 5 minutes or place whole cabbage in a bowl in microwave at the highest setting for at least 8 minutes to soften leaves. (The latter is better since the leaves are easier to remove from the core after being softened. Allow to cool a bit since they do get quite hot.)
Combine meat, rice, egg, salt, pepper and half the raisins. Put an amount on each leaf to be able to fold in sides and roll up as you would a burrito. Shred the heart of cabbage and use this to line bottom of pot. Put stuffed cabbage on top, close together. Add remaining shredded cabbage, onion, raisins, lemon juice, sugar or artificial sweetener, tomatoes and water. Simmer gently 2 ½ to 3 hours (can use crock pot). Serves 6.
