Ingredients

    6 Chicken Breast Halves, boneless, skinless
    Oregano, ground, 1/2 tsp
    Ground Cumin, 1 1/4 tsp
    Chili powder, 2 1/2 tsp
    Onion powder, 5 tsp
    Corn Starch, 1 tsp
    Lite Salt, 2 tsp
    Crushed Red Pepper, 1 tsp
    Garlic powder, 1 tsp
    Water, tap, 4 cup
    Tomatoes, red, ripe, canned, with green chilies, 1 8oz can
    Ortega Enchilada Sauce
    Quesadilla Cheese, 0.25 cup
    Tortilla, 12 serving

Directions

Cook the chicken most of the way in a skillet with one a spray or 2 of EVOO. While this is cooking, make your taco seasoning. Once the chicken is done, shred it and put in a pot, add taco seasoning and water. Let simmer 20 to 25 minutes.

Heat a tortilla, layer chicken in the middle and 1 tablespoon of enchilada sauce. Fold the burrito and flip it over, add a little of the cheese.

You can add lettuce and sour cream, light of course, to taste.

Will make 10 - 12 burritos
