Ingredients

    WET:
    Ener-G vegan egg replacer equivalent 2 eggs
    2 c orange juice
    1/2 c unsweetened applesauce
    2 t freshly grated orange rind
    1 c splenda brown blend
    1/4 c lecithin
    12oz fresh or frozen cranberries

    DRY:
    4 c total of white whole wheat flour, soy flour, pulverized oatmeal, oat bran, wheat germ
    1/2 c freshly ground flax seed
    2 T baking powder
    1/2 t salt
    1/2 t cardamom

    TOPPING:
    8 t turbinado sugar

Directions

Combine wet in one bowl.
Combine dry in separate bowl.
Mix together.
Spoon into mini muffin tins which have been sprayed with Pam. Sprinkle with turbinado sugar.

Bake 375 for 18-20 minutes for mini muffins (22 minutes regular size muffins).

Serving Size: Makes 78 mini muffins.
