Ingredients

    6 thinly sliced pieces of deli style smoked ham
    .25 cup diced mushrooms
    .25 cup diced fresh broccoli
    2 Tblsp lowfat or non-fat cream cheese
    .25 cup finely diced red bell pepper
    .25 tsp Garlic powder
    Pepper to taste

Directions

Separate and lay out ham slices flat. Mix all other ingredients together. Separate into 6 even portions and spread on ham slices. After spreading cream cheese mixture on each ham slice, roll each ham slice into a long tube around cream cheese mixture. Cut each tube into 4 even sections. Makes 24 roll-ups.

    The great thing about this idea is that you can use whatever veggies you have...I didn't have cream cheese either, so I used cottage cheese. Filling and delicious. - 2/20/10
