Ingredients

1 lb. Ground Beef
1 lb. Ground Lamb
1 Large Onion, chopped
1.5 to 2 lbs. Crimini Mushrooms, sliced/chopped
28 oz. Can Diced Tomatoes
.25 cup Minced Garlic
6 oz. Can Tomato Paste
Optional Spices:
Cumin
Smoked Paprika
Chili Powder
Liquid Smoke
Salt
Pepper

Great for those of us looking for something low carb and gluten free.
Directions
Cook onions about 5 minutes in a cast iron pan. Add mushrooms and cook until tender and water has evaporated.
Remove mushrooms and onions from the pan. Add lamb and beef and brown. Drain fat from the meat.
Add all ingredients to a slow cooker and stir. Add spices to taste. Cook for 6 to 8 hours on low or 3 to 4 hours on high.
Serve with shredded cheese, sour cream, and hot sauce, if desired.
Serving Size: 1/8th of the Chili - about 2 cups
