Introduction
almond-based raw crust; no dairy, no grains, no gluten. almond-based raw crust; no dairy, no grains, no gluten.Number of Servings: 2
Ingredients
-
crust:
2 oz almonds
1 Tbsp coconut oil
1 Tbsp coconut crystals (coconut sap sugar)
pinch sea salt
1 c fresh strawberries
1/4 c coconut milk
Tips
Adjust the salt according to your tastes and whether or not the almonds were salted. The first time I made it with sprouted almonds which had some salt in them, but the second time I made it I used raw unsalted almonds and had to add a pinch more salt to balance out the sweetness.
Directions
Make the crust: whiz almonds in a food processor until finely chopped. Add the coconut oil, coconut crystals and salt and pulse a couple of times until mixed. Press the crust into a small dish and place in the freezer for half an hour or more.
When crust has set, cut up 1 c strawberries into the crust. Pour coconut milk over the strawberries. I like to sprinkle one serving of chocolate-flavored Dynamic Greens powder on the top of that to make it chocolatey; a friend advises using dark chocolate syrup. It's also good with another little sprinkle of coconut crystals, or you could just be happy with the coconut milk. It's up to you. :)
Serving Size: makes 1 small pie, serves 1-2 people
