Ingredients

    Salmon fillet(s)
    Any type of tomato sauce/paste
    Cherry tomatoes
    Tinfoil

Directions

Cover an over-saf dish with tinfoil. Leave enough extra so that you can cover the top of the salmon as well (so that it will be encased in tinfoil while baking). Plac the salmon on top of the tinfoil and spread a tablespoon or so of sauce over raw salmon. Slice cherry tomatoes in half and place cut-side down on top of salmon. You can toss a few extra tomatoes around the salmon as well. seal the tinfoil all the way around the salmon creating a cocoon that it will bake in. The juice from the tomatoes will help to keep the salmon moist. Bake for approx 25 minutes on medium heat (until it flakes easily).
