Ingredients

1 cup warm, filtered water. ~100 degrees.
1 pack yeast
a glurp of honey
salt
3 cups AP flour.
2 TBL olive oil
Tips
preheat oven to maximum.
Directions
Put the water, honey, yeast and 1 TBL oil in the mixer bowl. Stir it together and let it sit until it foams.
Add 1 1/2 cups of the flour and about 2 tsp salt. Mix with bread hook until combined. Start adding flour 1/4 cup at a time until it's just a little bit sticky. Knead in the mixer or by hand for 5-7 minutes. Make a ball and place it in a bowl with the rest of the oil and coat it. Cover and put in a warm, draft free place for about 1 1/2 hrs or until it's doubled.
Punch it down and coat with a bit of flour. Divide in half. Make pizzas.
Serving Size: Makes two, 12" pizzas
