Introduction

Low calorie, very filling great alternative for a quick breakfast or snack. Low calorie, very filling great alternative for a quick breakfast or snack.
Number of Servings: 24

Ingredients

    2 eggs
    1 tsp vanilla
    2 c applesauce, unsweeted
    1 banana, mashed
    6 packets stevia
    5 cups old fashioned oatmeal
    1/4 c flaxseed meal
    1 Tbsp cinnamon
    1 Tbsp baking powder
    1 tsp salt
    2 3/4 c milk
    Optional toppings: raisins, pecans, walnuts, chocolate chips (not included in recipe calorie calculations)

Directions

1. Preheat oven to 350 degrees.
2. Mix eggs, vanilla, applesauce, banana and stevia.
3. Add oats, flaxseed meal, cinnamon, baking powder, salt and mix well.
4. Pour in milk and stir.
5. Spray 24 muffin cups or use cupcake papers. Pounr mixture evenly into muffin tin cups.
6. Add toppings if desired.
7. Bake for 30 minutes or until toothpick in center comes out clean.
8. Cool and enjoy. Freeze well.
