Introduction

Here is a basic chicken soup. I left out any grains because I like to add different stuff or leave it without. If you really like a grain in your soup, it is great to measure out left over cooked grain (noodle, coucous, rice, etc.) and add it (add it seperately to your calorie counter). Ingredients

    Ingredients:

    Chicken Breast, no skin, 5 ounces
    Mushrooms, fresh, 1 cup, pieces or slices
    Celery, raw, 2 stalk, medium
    Baby Carrots, raw, 8 large
    Onions, raw, 1 small
    Water, tap, 6 cup
    *Bullion, Chicken Flavored, 6 serving, optional, add to taste (I use Maggi brand powdered as it is lactose-free and I can use it to taste)
    garlic 1 clove minced (optional)
    parsley dried 1 tbsp
    sea salt (optional)
    black pepper (optional)

Tips

I use only a clove or less. Garlic has some medicinal qualities if you are sick, but you don't want the soup too garlicy.

Cooking time assumes cooked chicken.


Directions

If your chicken is raw, you will need to boil it until it is done in other water first. If it is cooked, you don't have to do that. I do not use my boiling water for the soup becuase it has a chicken film on top.

Chop celery, onion, and baby carrots to desired size (for kids - you can mince them and skip the mushrooms; for adults I leave everything more chuncky). In a medium to large soup pot combine all ingredients. Bring to a boil and simmer until carrot and celery are soft.

Divide into 6 servings. Serve hot. Top with a cooked grain or bean (noodle, lentile, couscous, rice, etc) if desired (not in nutritional information).
