Introduction

Ingredients

    2 large zucchini
    3 Artichoke hearts (in water not oil)
    1 cup diced cherry tomatoes
    1 small banana pepper
    1 small felicity pepper (mild jalapeno)
    1 Tbsp fresh basil
    1 Tbsp fresh oregano
    1 Tsp fresh sage
    1 Tbsp Minced garlic
    2 oz guda cheese

Tips

Is great to use all fresh ingrediants from the garden!!!!


Directions

- Slice the zucchini long ways in half. Scoop out the seeds making a hallow like a canoe.
- Dice tomatoes, artichokes, and peppers. finely chop all herbs, mince the garlic.
- Slice the cheese in thin slices the width of the hallow.
- mixe artichoke, tomato, pepper, herbs and garlic in a bowl.
- Fill zucchini boats with the mixture.
- Top with guda cheese.

Bake at 350 for 35 min or until zucchini is tender.
